3. Place the steamer in the steamer, cover it with gauze, put the glutinous rice on it, cover it with a lid, and steam it over high heat for 25 minutes. You can pour a bowl of hot water in the middle.

4. While the glutinous rice is being steamed, put the Suzhou sweet wine medicine in a small bowl, crush it with a rolling pin, and set aside.

6. Lift the gauze and drain with cold water.

7. Place it in a plate and cool it down to about 30°C, the ideal fermentation temperature for the fermented rice wine.

8. Start sprinkling Suzhou sweet wine medicine into the glutinous rice.

9. Put the glutinous rice into the yogurt pot that has been sterilized with hot water, and then add the glutinous rice and Suzhou sweet wine in several batches.

10. Finally, stir evenly, flatten it, dig a small hole in the middle, and add a little cold boiled water to facilitate fermentation.

11. Put some sugar osmanthus on top.

12. Place a small towel in the yogurt maker (because the fermentation temperature of glutinous rice 30°C-35°C is lower than that of yogurt 42°C, so some heat should be removed).

13. Cover the yogurt pot with a lid and put it in the yogurt maker.

14. Attach a towel and put the lid on the towel. Start the yogurt maker. You can see steam on the yogurt jar in the middle and the original pit has become smaller. Gradually, liquor appears in the pit, indicating that the medicinal fermentation of Suzhou sweet wine is taking effect. After about 25 hours, turn off the yogurt maker, take it out and put it in the refrigerator. It will taste better and more fragrant after 36 hours.

1. The steamed glutinous rice must be separated, cooled and not sticky.

2. After 15 hours of fermentation, you can add half a bowl of cold boiled water to prevent over-fermentation.
