How is baby milk powder made?

The entire production process of milk powder is very complicated. After the raw milk acceptance, milk pretreatment and standardization, milk sterilization and concentration, there are two very important steps: spray drying and cooling packaging.

Spray drying uses a centrifuge or reaction force to disperse concentrated milk into mist-like milk droplets through a sprayer, greatly increasing the contact area with hot air. The water in the milk evaporates instantly, and the droplets dry into spherical particles and fall to the bottom of the drying chamber. The water vapor is taken away by the hot air, and then the powder is discharged from the air outlet of the drying chamber. The whole process only takes 15-30 minutes.

The temperature of the packaged milk powder coming out of the drying tower is about 60-70 degrees Celsius. At high temperatures, the packaged milk powder is easy to separate fat, and fine flocs composed of fat and protein are formed on the surface when mixed. Therefore, the milk powder should be cooled to below 40°C before packaging. If the milk powder is packaged in large packages, it should be cooled to below 30°C before packaging.

Milk powder easily absorbs moisture during the cooling and packaging process. After milk powder absorbs moisture, its solubility decreases, and protein and fat are easily oxidized, producing an oxidized taste. Therefore, the relative humidity in milk powder cooling, storage and packaging workshops should be lower than 75%.
